In this video I lay it all out on the table to show you all the food I eat in a typical day here in Norway during summer! The raw vegan diet is all about variety! There's so much variation over the course of a year, yet very simple on a day to day basis. I typically eat mono meals of just one fruit at the time until I'm satisfied. As the seasons change, my diet also changes. At the moment I'm loving the European peaches and nectarines - as well as bananas and supersweet Pakistani honey mangoes almost every day. All animals in nature eat a raw food diet. The only food that looks and taste delicious in its natural raw state is fruit, and to a lesser degree tender vegetables! Contrary to popular belief, fruit actually fits our nutritional needs better than any other food group. When people evaluate the nutrient composition of fruit, they often do so on a nutrients per gram basis, as opposed to a nutrients per calorie basis! There's a crucial difference! Fruit is mostly water, an essential nutrient for sure, so you have to eat MORE volume to satisfy your caloric need. That is easy though. When you look at fruit on a per calorie bases you can see how nutritionally dense it really is! No more constipation, not more sluggish digestion - fruit flows easily through our system providing us with easily digestible fuel in the form of simple sugars (carbohydrate) to fuel every cell in our body! The fruitarian diet means we get the most amount of nutrition for the least amount of work! I mean, mangoes, papayas, coconuts, bananas, mangosteens, lychees, rambutans, dragonfruit, durian, jackfruit, mamey sapote, peaches, nectarines, melons, berries - the list goes on! Fruit is such excellent food for humans! So satisfying, so rich in organic sugars, fiber, water and essential nutrients for optimal health! The human body is a frugivore and we are optimally designed to eat sweet tropical fruits! The 80/10/10 diet is the ideal ratio of macronutrients since this is pretty much what we would do in our natural habitat. That means more than 80% of our calories coming from carbohydrates and less than 10% from protein and fat respectively. This is well supported by the scientific literature. The high carb, low fat raw vegan diet is the optimal for human beings. Remember of course that it's not really LOW in fat, it's simply IDEAL in terms of fat. Fruit fruit fruit! Let's talk about this interesting nutrient in depth! First of all let's mention that the science on B12 is not conclusive. There's a lot of speculation involved. Even though I think we can use the scientific literature to our advantage, we must not forget the fact that all animals in nature know nothing about nutrition and seem to be doing fine. Trusting our instincts and following our senses must be first priority. We are frugivores as animals and our natural environment is the tropics. As soon as we move away from natural living, things tend to get complicated. B12 is produced by bacteria. These bacteria live everywhere! In the soil as well as in our bodies. If we were not so meticulous about washing our hands and produce, we might be more likely to ingest an adequate amount of B12. If our food was produced in rich, nutritious soil with plenty of microbial activity, instead of dead soils sprayed with pesticides and herbicides, there would probably be more B12 ON our food as well. We do have b12 producing bacteria in our intestinal tract, and if it was not for our general lack of health and/or constant eating of antibacterial foods like onion and garlic, it's possible that we would be able to uptake enough b12 from our own system. Yes, there is b12 in meat products, but that does not mean we should eat meat. Just like there's vitamin D in fish, but our natural source of that vitamin is sunlight. It's a myth that only vegans have B12 deficiencies. There's plenty of meat eating people with issues as well. How do we even know what the ideal b12 levels are like? Most people are eating too much meat and lots of fortified foods. Chances are that their b12 levels might be artificially high. We don't have any sound physiological norms to follow. Even though most vegans have "low" levels of b12, there are plenty of people living long lives with NO symptoms of deficiency whatsoever at very low levels of b12 in the blood. If you are experiencing symptoms of b12 deficiency or you think you might be deficient, it's possible to try out supplementation for a while to see what happens. This is very subjective at best, but chances are you're not going to experience any problems like toxicity since all B vitamins are water soluble and the body will flush out any excess. Personally I have experimented both with and without supplementation, and I still have not reached a definite conclusion. Health is nevertheless the key focus here, like always. By eating a diet of fresh, raw fruits and vegetables, grown in a healthy, organic soil we are optimizing our chances of "b12 contamination". By cultivating health in general we optimize our ability to uptake and use b12. By avoiding foods that damage our intestinal flora like garlic, onion and chili, as well as medical drugs and antibiotics, we might be able to uptake the b12 produced in our small intestine. By being in contact with our natural environment, the soil and plants, we increase our exposure to B12 producing bacteria. By avoiding stress we minimize the loss of b12 through metabolic processes. Essentially - creating health, both within our bodies and in our immediate environment, is key in optimizing our b12 situation. I want to show you exactly what it means to eat a fruit based diet of whole foods and what natural eating looks like. Sometimes the best way to learn is to see how it's done in practical, everyday terms. I started out my day, here on La Palma in the Canary Islands, with a breakfast of water rich papayas. They were super sweet and delicious, a perfect way to hydrate and carb up after a long nights sleep! Along with some sunshine I was ready for the day! Lunch consisted of mangoes and bananas! The mango season peaks around October here on La Palma and the fruits are just absolutely divine! Sugar sweet, dense and almost creamy! Along with some Burro bananas that are also a great source of carbohydrates, as well as minerals, vitamins and all the other good stuff! I started my dinner meal with more mangoes, followed up by cucumber and avocado. Creamy and so tasty! Sometimes I also eat green leafy vegetables, but today only some cucumber (which is botanically speaking a fruit). There are many different approaches to diet. Even within the raw vegan movement, there are various styles. But surely, there must be an optimal way? There must be THE way nature intended. Our species specific diet, the diet that fits our physiology and anatomy the best, is a diet of whole, raw fruits and vegetables. We are tropical frugivores by nature, and most of our daily calories should come from sweet, tropical fruits! Some tender vegetables are also part of the equation! All serious nutritional studies point towards lowering our fat intake and increasing our carbohydrate intake as a good thing. A plant based diet is certainly the best for humans, it's what we are adapted for. High fat low carb diets (hflc) like atkins, paleo and others, might help you to loose weight by killing your apetite (when we starve ourselves of carbohydrate the body goes into ketosis, a survival mode for when there's no food around, and the apetite goes down drastically) but the long term, and even short term, effects of this lifestyle are not good. We are most satisfied when we supply the body with carbohydrates in the form of simple sugars. By eating a low fat diet we also tend to eat a much higher volume of food that if we were eating a high fat diet, this means the same amount of calories but often double the intake of fiber, water, minerals, vitamins, enzymes and other valuable nutrients. Remember, animal foods have NO fiber or water, an excess of certain nutrients (and remember, more is not better) and is completely deficient in others. Hi my babies! PLEASE READ, important information about this video: The first 10 minutes of this video is an explanation of my up-and-down weight from before going vegan to after. I feel that I answered the questions that are in my inbox, and the requests for before-and-after pictures, but I also feel that I forgot to make some REALLY important points. Please read: 1. The number on the scale DOES NOT MATTER. What matters is your health, how you’re feeling, and what you’re putting into your body. What matters is how active you’re being. I hope that by telling you the number I was on the scale during these 4 different years, that you won’t think I’m giving WEIGHT so much importance. It was just a way to measure the difference before being vegan and after. Please understand that that number DOESN’T MATTER. The ethical and healthful choices you make each time you sit down to eat is what matters. 2. I wasn’t starving myself at 94 pounds, I was trying to heal my body through food. I got extremely skinny, but still the most fit I’ve been, through a high carb, low fat diet, biking 8 miles a day 3-5 times a week, and walking MILES on the weekends. 3.You CAN lose weight on a regular vegan diet. If you’re not eating crappy foods all day long that are fried and full of oil and sugar, just cutting out the dairy is going to help you lose a significant amount of weight. 4. Though I am advocating meal replacement with a healthful, high-calorie raw vegan smoothie, I am not a nutritionist nor a dietician. Please consult your doctor before making any drastic diet changes. If they tell you not to go vegan, the choice is up to you - just make sure you’re getting all the facts. 5. Though I did begin veganism because of aesthetic reasons, I’ve been an animal lover my entire life. My choice to becoming vegan was HEAVILY influenced by that - I realized that I can’t call myself an animal lover, protest the hunting of wolves, save the whales, etc., while still EATING some of those animals and their byproducts. Please understand that my desire to look better, fueled a better life. 6. I get this question a lot and I forgot to address it in the video - I DO NOT buy anything that has been tested on animals or uses animal byproducts. That means no leather and only cruelty-free and vegan beauty products.
